Chocolate Cherry Almond Torte

INGREDIENTS
9" torte ~12 slices

10 oz pack of dark chocolate chips or chunks
24 oz jar of sour cherries
1 cup almond flour
1 tbsp almond extract
1 large egg whisked with fork
1/2 cup almond milk (vanilla unsweetened)
3 tbsp Stevia or sugar
1 can almond whipped cream

Preheat oven to 350 degrees. Drain sour cherries well. Line 9" circular pan with parchment paper. Pour chocolate pieces into to bottom. Wisk egg in cup. Wisk in pure almond extract. Add almond milk. In bowl combine almond flour and 3 tbsp sugar or Stevia. Add in egg/almond milk/ extract liquid. Evenly spread cherries over chocolate pieces. Pour dough mixture evenly over cherries. Bake for 30 minutes or until dough is set. 

Chill in freezer or fridge. Serve cool with almond whipped cream.

Oyster Soup

INGREDIENTS
~2 bowlfuls

1/4 cup water
1/2 a chopped onion
1/2 a chopped red pepper
1/2 cup chopped celery 
1 cup chopped cabbage
2 cloves of garlic chopped
2 cans smoked oysters
2 fillet of frozen Tilapia
2 tbsp mayo
steak seasoning (salt/pepper type mix)
non-salt seasoning mix (with lemon peel) like Ms. Dash
squeeze of fresh lemon (or 1/2 tsp garlic cured in lemon juice)

In shallow pan bring vegetables to simmer over medium heat, covered. When slightly tendered, add frozen Tilapia on top, sprinkle with seasoning, and cover. Continue to simmer until fish flakes easily. Flake fish completely. Remove from heat. Add two tablespoons mayo and squeeze of lemon or half teaspoon of chopped garlic cured in lemon juice. 
Serve with oyster crackers.
